Spicy Macaroni (Indian style)

Macaroni - 1/2 packet
Onion - large 3nos (sliced)
Tomatoes - 3nos (cut into peices)
Green Chillies - 2nos(slit into half)
Jeera - 1tsp
Gingergarlic paste - 1tsp
Coriander, Red chilli powder - 1 tsp each
Garam Masala - 1/2 tsp
Salt - To taste
Oil - 2 tsps
Coriander leaves and Mozarella cheese - To Garnish

Method: Boil Macaroni in salted water till soft. Drain and keep aside. In pan take oil, put jeera, greenchillies,Once they splutter add the onion and let it become light brown. Then add the tomato and fry till it leaves oil. The add the powders and Gingergarlic paste. Add salt according to the salt u added to boil macaroni. Let this mixture remain on low flame for 5 minutes. Stir once in between. Then add the boiled macaroni and mix well so that the onion tomoto mixture is evenly spread. Garnish with chopped coriander leaves and grated mozarella cheese.
Serves as a breakfast or a relishing evening snack for children back from school.

Hara Bhara Kabab

Green peas - 1cup (boiled) or even frozen can be bought from cold storage
Palak leaves - 10-15nos (boiled)
Coriander Leaves - 1 small string
Potato - 1large (boiled)
Chaat masala - 1tsp
Green Chillies - 2nos (finely chopped)
Cornflour - 2tsp
Sal - to taste
Oil - for deep frying

Method : Mix all ingredients in a vessel. Make small round shaped flat kababs. Fry oil in a pan and deep fry these kabas until both sides are light brown. Remove from oil and tap it on a tissue so that any excess oil is extracted.
Serve with chutney or tomato sauce. Serves as a godd starter with soup or any drink at a dinner party.

Onion Fritters

Onion - 2nos
Green Chillies - 2nos (cut into small pieces)
Besan - 2-3 large teaspoon
Red Chilli powder - 1 tsp
Salt - To Taste
Oil for deep frying

Method : Slice onions. Add green chillies, besan, red chilli powder and salt to it and mix well sprinkling water now and then. The consistency should be like the dough we prepare to make vadas. Keep the mixture aside.
Heat oil in a pan and once it is hot, simply take few amounts of the misture in your hand and roughly put into the oil.(no shaping is required). Serve with green mint chuntey or tomato sauce.

TIP - Wash onion just before cutting and preparing the mixture. By doing so, u dont have to keep adding water since the washed onion will have enough water.
